Dice onions and fry in olive oil
When soft add chopped peppers and fry for a few minutes.
Add chipotle paste, tomatoes and beans and simmer for 5 mins. Add spinach and allow to wilt.
Squish rice in the packets to break it up and then add to the pan.
When the rice is hot an cooked add coriander to service.
Place a spoonful of the rice and bean mix on a wrap. Top with salsa and cheese. Fold and eat – be careful, if the wraps aren’t folded perfectly it may dribble down your chin!
Olive oil
1 red onion
2 Peppers – pick your colour!
1 tin tomatoes
1 tin black beans
2 tablespoons chipotle paste (if you can’t get that use 2 heaped teaspoons fajita seasoning)
Handful spinach
Handful chopped coriander
2 packs microwave Mexican rice – aldi’s is good! (if you are at home you can cook your own rice)
1 pack wraps
Salsa
Grated cheese
