Veggie Stew & Dumplings

A hearty stew & dumpling recipe!


  • Dice Onion, peel and chop veg.
  • Fry off onion, chopped garlic and thyme in olive oil
  • When onion is soft add potatoes, carrot and parsnip
  • add 9 cups water, stock cubes, bring to the boil and simmer
  • For the dumplings - mix together the dry ingredients in a bowl, add oil and mix
  • Slowly add the milk until a dough is made
  • Form the dough into individual balls.
  • Add balls to the stew after it has been simmering for around 20 minutes, simmer for further 10 mins. Only stir gently to stop dumplings from breaking up

3 Onion

3 tbsp Olive Oil

6 cloves garlic

6 medium sized potatoes

6 carrots

4 parsnips

6 tbsp tom puree

6 tbsp marmite

2 tsp thyme

2 tsp parsley

6 bay leaves

3 veggie Stock Cube


For the Dumplings

500g plain flour

4 tsp baking powder

350ml ml milk (Use a vegan alternative if vegan)

3 tbsp olive oil

2 tsp garlic powder
