Easy Tomato Soup

Adapted from BBC Good food.

Stages 1-4 can be done at home with stages 5-6 being completed in the garden (remember if you are cooking at home your kitchen needs to be registered with your local environmental health team)


  1.  Peel and chop garlic and fry in a little of the sundried tomato oil.
  2. Add sundried tomatoes (in total use about half of the oil from the jar) and fry on a medium heat for around 5 minutes
  3. Add tinned tomatoes, passata and veg stock
  4. Bring to the boil and simmer for around 20 mins
  5. Blitz with a hand blender until smooth
  6. Add chopped basil and soured cream

When serving add black pepper and a blob of green pesto in the bowl

1 jar sundried tomatoes in oil

9 cloves garlic (crushed)

9 tins tomatoes

1 jar tomato and basil passata

1.5 litres veg stock

1 tub soured cream

1 small basil plant

1 jar green pesto

Pepper to serve
