Leek & Potato Soup

This is a fantastic autumn soup that can be made with homegrown ingredients.
Adapted from BBC Good food, Stages 1-5 of the recipe can be done at home with stages 6-8 being completed in the garden (remember if you are cooking at home your kitchen needs to be registered with your local environmental health team).

Instructions

  1.  Peel and chop onions and leeks
  2. Fry in a little olive oil
  3. Peel and chop potatoes and add to the pan
  4. Add stock until veg is covered in the pan (use 1 stock cube for every pint water)  The contents should fill about 2/3s of the pan
  5. Bring to the boil and then simmer until potatoes are soft
  6. Blitz with a hand blender
  7. Add milk and cream
  8. Serve with black pepper

Ingredients

4 leeks

2 Onions

Large handful of potatoes! (we use the small homegrown ones that get left behind after everyone has taken what they want) Probably around 1-1.5kg

Vegetable Stock

1 pint milk

1 tub cream
